These recipes are simple and inexpensive. The chicken salad is light, the apple sauce spiced just right, and the oatmeal cookies are scrumptious.

These recipes are great any time of year for lunch or dinner. The chicken salad is easy and perfect by itself or on a sweet roll or croissant. The applesauce is a great compliment to any chicken, turkey, or pork chop dinner, and the oatmeal cookies add just the right touch of sweetness to the end of a light but fulfilling meal.

Chicken Salad

  • 1 whole cooked chicken (look in deli), shredded
  • 3/4 cup mayonnaise (can be substituted with plain Greek yogurt)
  • 1 lemon
  • 3-4 golden delicious apples, cored and cubed
  • 1/2 cup walnuts
  • 1/2 cup raisins or cranberries (optional)
  • Salt and pepper
  • 6 sweet rolls (optional)

Directions:

  1. Shred chicken and place in a medium bowl. Be sure not to get any bones in the mix.
  2. Mix in mayonnaise, cubed or chopped apples, walnuts, and raisins. Stir together.
  3. Squeeze lemon over the salad. Mix to blend. Salt and pepper to taste.

Serve on a sweet roll, bread, or by itself on a bed of fresh lettuce. Turkey can be substituted for the meat. Making this a great recipe for Thanksgiving or Christmas leftovers.

Cinnamon Applesauce

To continue with a light but fulfilling meal, pair this with homemade applesauce.

Ingredients:

  • 4 golden delicious apples, cored and chopped
  • 3-4 tablespoons butter
  • 1/3 cup brown sugar
  • 1/4 cup white sugar (optional, just for extra sweetness)
  • 2 tablespoon cinnamon
  • 1 teaspoon nutmeg
  • 1 orange (optional)

Directions:

  1. Heat butter in a non-stick pan over medium heat.
  2. Toss apples into the butter, coating well.
  3. Sprinkle brown sugar, white sugar, cinnamon and nutmeg over the apples. Mix together.
  4. Turn heat to medium-low and cook till apples soften. About 10 minutes. Stir every 1-2 minutes.
  5. Once the sauce has thickened and apples softened, remove from heat. Squeeze orange juice onto sauce, mix and serve.

What makes this recipe perfect for almost any meal (especially during the fall and winter months) is, most the ingredients are already in the home. Which makes it affordable and accessible.

Oatmeal Cookies with Brown Sugar Butter Glaze

No meal is complete with out a sweet treat. A fresh baked oatmeal cookie with a brown sugar glaze is a great end to a good meal.

Ingredients:

  • 1 1/2 cups all-purpose flour (for a thinner cookie, use 1-1 1/4 cups)
  • 2 cups dark brown sugar
  • 1/4 cup white sugar
  • 3/4 cup butter
  • 1/3 cup molasses
  • 2 eggs (beaten)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1 1/2-2 1/2 cups quick cooking oats
  • 1 cup raisins or cranberries (optional)
  • 1 cup chopped pecans or walnuts
  • 1 teaspoon vanilla extract

Directions:

  1. Preheat oven to 350
  2. In a large bowl, mix 1 cup brown sugar, 1/2 cup white sugar, and 1/3 cup molasses together (spray spoon with baking spray to prevent molasses from sticking).
  3. Place 1/2 cup butter in with the sugar and molasses. Using a mixer sprayed with baking spray, cream it all together. Stir in vanilla and eggs.
  4. In a separate bowl, flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and cloves. Sift in to the wet mixture, about 1/2 a cup at a time.
  5. Combine oatmeal, raisin, and pecans in a bowl. Fold in to the dough.
  6. Using a teaspoon, drop the cookies on to a cookie sheet. Bake 12 minutes.
  7. While cookies bake, prepare the glaze. Melt 1/4-1/3 cup butter over medium-low heat. Once the butter is melted, turn the heat to low and stir in one cup of dark brown sugar. If the glaze is too thick, add 1 tablespoon butter.
  8. After the cookies have baked, place on a cooling rack with paper towels or a baking sheet underneath. Drizzle the glaze over the cookies. Let cool and enjoy.

With so many autumn characteristics incorporated in this meal, it would definitely be a great end of summer beginning of autumn meal.
